углекислая мацерация (способ ферментации, при котором в специальный чан закачивают углекислый газ и при температуре 20-25° C засыпают неповрежденные ягоды, — слабое брожение начинается именно в ягодах, исключая косточки и черенки, мякоть и сок принимают из кожицы ароматические и красящие вещества и достигают крепости 1-2% алкоголя; мацерация продолжается, как правило, 15-20 дней, после чего ферментация идет традиционным способом, т.к. верхние слои ягод постепенно давят нижние и они дают сок; этот метод предназначен для производства молодых, ароматных, хорошо окрашенных красных вин, с выраженным фруктовым вкусом, но низким содержанием танинов (в частности, "Божоле Нуво"))
